Honey Jalapeno Cole Slaw

 A colleague gave me this fantastic recipe, courtesy of her father.  A perfect summer salad (no dairy!).  I want to pin it to Pinterest and the only way I know how is to post it here first.  

Honey Jalapeno Cole Slaw
6-7 cups shredded cabbage
1 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 cup carrot (per Dad!)
1/2 bunch fresh cilantro, chopped (1/2 cup)

Vinaigrette
1/2 - whole jalapeno pepper, seeded
2-3 green onions, roughly chopped
2-4 cloves garlic
2 tablespoons fresh lime juice
2 teaspoons sherry
2 tablespoons apple cider vinegar
1-1/2 tablespoons honey
1-2 tablespoons cilantro
1/2 teaspoon salt
1/4 teaspoon white pepper
2/3 cup salad oil
2 teaspoons Dijon mustard

1 - In a large bowl combine cabbage, peppers, onions and cilantro
2 - To make the dressing, place all vinaigrette ingredients except oil in a food processor or blender; puree.
In a slow steady stream add oil until incorporated.
Pour over cabbage mixture; toss. 
Chill for at least an hour before serving. 
Makes 8 cups salad.
